Cold rice noodles salad with roasted sesame dressing (4 pax)
Ingredient 1. Laksa Bee Hoon (Rice Noodles)- 400g 2. Carrot - half a fruit (shred into long strips) 3. Japanese cucumber - 1 fruit (shred into long strips) 4. Iceberg lettuce - a few leaves 5. Yellow Capsicum - 1 fruit (sliced) 6. Mint leaves - 8 to 10 pcs 7. Roasted Sesame dressing - 4 tbsp 8. Crushed peanuts - 2 tbsp 9. Fresh prawns - de-shell, boil for 20secs and half it) 10. Green lemon - 1 to 2 fruit (cut into smaller piece)
Preparation 1. Boil the laksa bee hoon for 1min (from the moment when water is boiling)
2. Once done transfer into cold water until noodle cools down. Drain it and transfer into a big bowl. Line the bottom of the bowl with some ice before placing the noodles in. Add some ice on the top and cover the bowl with wraps and place into fridge to chill it further.
3. Place all the ingredients into the fridge to chill them before mixing them together to serve.
The Dish 1. You may choose to use a serving plate or bowl for this dish. Place a few pieces of iceberg lettuce at the base and add in the cold Laksa Bee Hoon (rice noodle).
2. Place the rest of the vegetables, prawns on top and pour 1 tbsp of roasted sesame dressing on top. Add 1 to 2 tsp of crushed peanuts and place a piece of green lemon by the side before serving the dish.
Remember to serve and eat this when is still cold. Very appetizing.
Mistake made. 1. I should have boil the prawns before halving it. I halved it before boiling and end up the prawns become curly. Not too nice when presenting.
