Stir-fry Mani Vegetable with egg (马尼菜炒蛋)


Ingredient 1. Mani Vegetable - 1 pkt 2. Dried Shrimp - 1 small handful 3. Eggs - 2 pcs 4. Chicken stock- 50ml 5. Minced garlic - 2 cloves worth


Preparation 1. Pluck all the leaves from the branches and throw away all the stems. Wash and soak the leaves and rinse it. After draining away the water, using your bare hands, crush and squeeze all the leaves until they are all crumpled.


2. Rinse and drain dried shrimp and set aside.​


The Dish 1. Heat the wok and add 2 tbsp of cooking oil. Introduce the minced garlic into the wok and saute it till fragrant.


2. Add in the dried shrimp to saute for 5 secs and pour in the crushed leaves of the mani vegetables. Continue to stir-fry until the leaf colour darkened.


3. Crack 2 eggs into a bowl, season it with some light soya sauce and mix it well. Pour the the eggs and quicken stir-fry the entire mixture until the eggs solidify.


4. Once eggs solidifies, add in the chicken stock and allow it to simmer for 2mins before serving.
