Seafood fried rice (海鲜炒饭) (4pax)

Had a packet of scallop with shell left in my fridge since CNY (3pkt for $10 from Woodlands Terrace), so decided the make use of it to do fried rice. Ingredient 1. Overnight rice - 4 bowls (or Pre-cook and left to cool rice) 2. Eggs - 2 pcs 3. Chinese wine sausage - 2 pcs (slice into smaller pcs) 4. Crab leg meat - 1 pkt (refer to pics) 180g 5. Scallop with shell - 1 pkt (refer to pic) 6. Prawns - 4pcs (De-shell and diced into smaller pcs) 7. Minced garlic - 2 cloves worth 8. Fish sauce - 3 tsp 9. Salt - add to taste 10. Beansprout - 100g

Preparation 1. Heat the wok, add in the eggs and scrambled the eggs. Break the eggs into smaller piece so that it is easier to mixed into the fried rice. 2. Heat oil, add in half of the minced garlic and saute till fragrant and add in the scallop and stir fry for 20 secs before adding in the crab leg meat and diced prawns. stir fry till they are half cook, off heat and set them aside.


The Dish 1. Heat wok with medium heat. Add some oil and saute the rest of the garlic. Upon fragrant, add in the sliced sausages and saute a while before adding in the rice. 2. Upon adding the rice, turn up the heat and keep doing the stir frying action until all the rice are loosen (when you don't see lumps of rice). 3. Once all the rice are loosen, add in the prepared eggs and mixed them well. 4. Add in 3tsp of fish sauce and a round of white pepper to the rice and continue to mix well. 5. Add in the scallops, crab meat and prawns. Keep doing the mixing action until everything is mixed evenly and sprinkle in the deserved amount of salt. 6. Add in the beansprout and continue to stir fry the mixture till the Beansprout starts to soften and off the heat. The remaining heat left in the rice will cook the Beansprout further. 7. Serve the fried rice with some garnish of your choice. If you happen to have some preserved green chilli, do serve them together. Perfect match! Happy cooking and Bon Appetit!
