Stir fried prawns & squid in spicy dried shrimp paste with fine asparagus. (2 pax)
Decided to try doing this dish when I saw the packeted spicy dried shrimp paste shown in the picture while I was browsing in Supermarket. Remembered that I tasted something like that during some banquet dinner, so no harm trying. I should have use scallop instead of frozen squid. The taste is still nice and yummy though. By the way, its not the spicy type. A non chilli taker should b able to accept.
Ingredient 1. Spicy dried shrimp paste (shown in pic) - 2 tbsp 2. Prawns - 12 PCs (De-shell and De-vein) 3. Squid - 200g 4. Fine Asparagus - 1 pkt ( cut in 3cm long stalk) 5. Fish sauce - 2 tsp 6. Sugar - 1 tsp 6. Salt to taste
Preparation 1. Stir fry the cutted asparagus with 1 tbsp of cooking oil till it turn slightly darker green than it original state. Remove n set aside. (This step is important. If you choose to avoid this and intent to cook the asparagus with the prawns & squid, it might cos either one of them to be too overcooked.) You may choose to boil the asparagus as well. Either way works! But remember to boil with some oil n salt.
The Dish 1. Heat up wok in medium heat and add 2 tbsp of cooking oil
2. Add in 2 tbsp of spicy dried shrimp paste and stir well.
3. Turn up the heat and add in the prepared prawns till it turn slightly pink and add in the squid and 2 tbsp of water and 1 tsp of sugar.
4. Once the squid starts to curl up, quickly add in the Pre-fried asparagus and continue to stir fry.
5. Add in the 2 tsp of fish sauce n some salt to taste. Once the sauce starts to boil, off heat and you are ready to serve.
6. This dish goes well when serve with steamed plain rice!
Mistake made 1. Should have used fresh squid instead of frozen ones. The taste and texture is just not the same.
2. I should bought n use scallops and won't have the problems with the squids.
