My version of Mee Rebus (6 Pax)
Was so tempted by a friend on Facebook showing her homecooked Mee Rebus, so decided to do my own version.
Ingredient 1. Sweet potatoes - 500g (steamed n mashed) 2. Chicken stock - 1litre 3. Curry powder (for meat) - 2 tbsp 4. Preserved Soya Bean - 2 tbsp 5. Galangal - thumb size (cleaned and bruised) 6. Lemongrass - 2 stalk (cleaned and bruised) 7. Crushed peanuts - 3 tbsp 8. Yellow noodles - 1kg 9. Firm beancurd - 2 small pcs (diced n fried) 10. Green chilli - 3 pcs ( sliced) (red chilli optional) 11. Hardboil Eggs - 4pcs 12. Coriander - 4 stalks (chopped coarsely) 13. Fried shallot - enough for garnish 14. Water - 1 litre 15. Cooking oil - 5 tbsp 16. Sugar - 4 tbsp 17. Beansprout - as per desired
Preparation ( boiling of gravy) 1. Heat up a pot, add in 5 tbsp of oil before adding the bruised Galangal and lemongrass.
2. Once fragrant, add in the 2 tbsp of preserved soya beans, 3 tbsp of crushed peanuts and 2 tbsp of curry powder and stir fry for a while before adding in the chicken stock.
3. Bring the mixture to boil and add in the mashed sweet potatoes. Remember to keep stirring the mixture till all the mashed sweet potatoes dissolved.
4. You will see that the gravy is now very thick and gluey. Add in 1 litre of water and mix them well. (Continue to stir the gravy)
5. Upon boiling, add in 3 tbsp of sugar and stir well. Taste it and decide whether u need to add another tbsp of sugar or not. (With the preserved soya beans, you likely will not need to add salt.)
6. Once again, check texture of the gravy. Its it still very gluey or thick, you may add in more water, mixed it well and off the heat.
The Dish 1. Boil another pot of water to blanch noodles and bean sprouts. Upon boiling, using a strainer, add in the desired amount of noodles and boil it for about 8 secs, drained and place it onto your serving plate.
2. Pour the gravy over the noodles.
3. Blanched the desired amount of beansprout for 3 seconds and remove before it loses its crunchiness. Place it on top as part of the garnish.
4. Garnish the dish with some chopped coriander, green chilli, fried shallots, hard boil egg and some fried dice beancurd.
Note that I do not know how authentic my method is as compared to the original recipe of Mee Rebus, but at least it taste similar. Hope this helps.
