Seafood Spaghetti with Mexican Asparagus and Garlic Oil (2pax)

Just suddenly feel like doing something different. Love the taste of garlic therefore attempt to do this dish with some seafood. Though I do not have the correct utensils and ingredients to do it, but well, so long the taste is alright, presentation doesn't really matter.

Ingredient 1. Spaghetti sticks - 250g 2. Prawns - 8 pcs ( de-vein & de-shell and set the prawn heads aside) 3. White Venus clams - 14pcs 4. Garlic - 5 cloves (4 cloves sliced & 1 clove minced) 5. Mexican Asparagus - 3 sticks (cut to bite size. Remember to peel off the fibre layer near the end of the asparagus so that it won't be so chewy due to the fibre) 6. Melted butter - about 3 tbsp 7. Olive oil - 2 tbsp


Preparation 1. Boil a pot of water, add some oil and salt. When boiling, add in the spaghetti sticks and boil for 8 to 10mins.


2. After done with the spaghetti, continue to boil the water, add a bit of oil and add in the bite size asparagus. Boil for 15 to 20secs and remove.


3. Heat wok using low heat, add in the melted butter and 1 tbsp of olive oil and saute the sliced garlic till its lightly fragrant, remove and set it aside. Do not use high heat as it will cause the butter n olive to be burnt. At the same time, do not brown the garlic as it might give a bitter aftertaste.


The Dish 1. Heat wok using low heat, add 1 tbsp of olive oil to saute the minced garlic till fragrant and add in the prawn heads. Saute the mixture till the prawn head fragrant is clearly presented.


2. Add 4 tbsp of water to the mixture and place in the White Venus clams. Mix them well n cover the wok for 1min.


3. Once the clams starts to open up (remove those that are not open as they might contain mud that will spoil the dish) add in the prawns, mix a bit and add in the boiled spaghetti and the prepared garlic slice and oil.


4. Mixed the entire dish well until the water dries up. Sprinkle some salt to taste. Do observe that all ingredients are nicely cooked before adding in the boiled asparagus. Mixed for 15 secs and off the heat.


5. Remove all the prawn heads for better presentation.


Mistakes made 1. Should not have use a spatula to mix the dish. Should have use a pair of chopsticks in order not to break the spaghetti into small pieces.
