Marmite Chicken Mid Wing (Air Fried)
Ingredients 1. Mid Wing - 14pcs 2. Marmite - 1.5 tsp 3. Maltose - 1 tsp 4. Sugar - 1tbsp 5. Oyster sauce - 1 tsp 6. Water - 2 tbsp 7. White sesame - 1.5 tsp Preparation 1. Marinate the mid wings overnight with 2pcs of red fermented beancurd, a dash of pepper, 1tbsp of sugar, 2tbsp of light soy sauce, white pepper, 1 tbsp of sesame oil, a dash of five spice powder and mixed them well. 2. 2hrs before cooking it, remove the cover of the marinated wings, pour away all the liquid in the marinating bowl and leave it uncovered in the fridge. The Dish 1. Mixed 2 tsp of dark soy sauce to the wings and mixed well. 2. Air Fry the wings in 2 batches at 180 degree Celsius for 15mins. 3. The wings should be nicely done with a nice colouring after the timing. (Looks like BBQ wings) set it aside for later usage. 4. Heat wok using high heat for 2min and off the heat. Add in the white sesame seeds and continue to do mixing action in the wok until the seeds are lightly browned. This action should not take you more than 2 mins. 5. Mixed the Marmite, maltose, sugar, oyster sauce and water together. Heat the wok with medium low heat and add in the mixture. Allow the mixture to slowly thickened and becoming sticky looking. (Do not turn up the heat speed up as it will cause the mixture to burnt) 6. Once thickened, pour in the mid wings and mixed everything together until its evenly coated. Remove the wings into the serving plate and sprinkle the prepared sesame onto the wings. As I understand that everyone have different preference for sweetness and saltiness, do taste the sauce and add which ever you deem necessary before add the wings. Happy cooking and Bon Appetit!
