Abalone Salad with Thai taste (凉拌鲍鱼沙律)

Ingredient 1. Abalone - 1 can (blanched and sliced) 2. Razor clams - 1 can 3. Yellow onion - 1 pcs ( peel and sliced) 4. Red chilli - 2 pcs ( sliced) 5. Thai green lemon - 2 bigs ones ( juiced) 6. Cherry tomatoes - 12pcs ( half it) 7. Japanese cucumber - half a fruit (sliced) 8. Sugar - 3 tbsp 9. Fish sauce - 1.5tbsp 10. Vinegar - 2tbsp 11. Oyster sauce - 0.5 tbsp 12. Salt - 1 tsp
Preparation 1. Add 1 tsp of salt to the sliced cucumber and leave it aside for 20mins. Onces times up, rinsed and squeeze dry.
The Dish 1. Use a big mixing bowl, add in the sliced onion, cucumber, red chilli and halved tomatoes into it.
2. Add in the Thai lemon juice, sugar, vinegar, fish sauce and oyster sauce and mixed it well.
3. Add in the sliced abalone and razor clams into the mixing bowl and mixed it together with the salad.
4. Taste it and add which ever seasoning that you feel that there is a lack to suit your own taste buds.
5. Place the entire dish into the fridge and chill it for at least 1 hrs before serving the dish.
For those who like your dish to be spicy, you have adopt 2 options.
Option 1, replace the big red chill with cutted chilli padi and mixed into the dish.
Option 2, pounded or grind 10 dried chilli after soaking it in hot water. Stir fry the chilli paste until fragrant and add it into the mixing bowl when it have cool down.
I've make this dish for the entire family with kids, therefore spiciness is out of the equation. Also, if you happen to have plum paste at home, you can choose to add 1 tbsp to it as well to make it more oriental.
