Hor fun with shredded chicken (鸡丝河粉) (4 to 6 pax)

I spent around $8 to do up this dish as I have some of the ingredients like silverfish, preserved green chilli.

Ingredient 1. Chicken breast meat - 1 pc (wash clean n blanch in hot water for 2mins) 2. Chicken drumstick - 1 pc (wash clean n blanch in hot water for 2mins) 3. Mini Hor fun - 1kg 4. Choy sum (菜心) - 1 small pkt 5. Prawns (medium size) - 8pcs (De-shell) 6. Salted silverfish (银鱼)- a handful 7. Ginger - 4 slices 8. Garlic - 1 clove 9. Preserved green chilli - 1 bottle from supermarket.


Preparation 1. Boil a pot of water (enough to submerge both the drumstick n breast meat with water level about 1cm over the chicken). Add in the sliced ginger, garlic n chicken. Using medium heat to boil it for about 1hr till the stock is fragrant n ready.


2. Once done, remove the chicken parts n allow it to cool down before shredding it.


3. Blanch the de-shelled prawns into the stock for 2mins after you have off the heat. Allow the heat to slowly cook the prawns. After the 2 mins, remove prawns and let it cool down. After that, halved the prawns so that it becomes a thinner piece. (If you prefer a whole prawn, you may skip the halving step).


4. Heat wok, using medium heat, add oil and fry a handful of silverfish. Drained the oil and place it on a kitchen towel.


5. Uses another pot, boil water and blanched the amount of desired vegetables (around 1 to 2 stalk per pax). Once done, set them aside.


The dish 1. Using the chicken stock, add 0.5 cap of cooking wine, 2 tbsp of oyster sauce, 2 tbsp of dark soya sauce, 1.5 tbsp of sugar, 1 tsp of salt and bring to boil. Remember to taste it and make adjustments before proceeding to next step.


2. Once it is boiling, mix 4 tsp of corn flour with water and add it into the boiling content. Do stir it constantly till the content becomes gluey and off heat.


3. Making use of the water to blanch the veggies, add about 1 tsp of salt and bring to boil. Upon boiling, add in the desired amount of Hor Fun and blanch for about 45secs.


4. Drained the Hor fun n pour them onto a serving plate. Add a scoop or 2 of the prepared gravy on the Hor fun and garnished with the prepared ingredients. Add veggies, shredded chicken, halved prawns and fried silverfish. If you have fried shallots, do add them as it will bring more fragrance to the dish.


5. Before serving, don't forget to serve it with preserved green chilli to give you the hawker style presentation.

Mistake made. 1. I forgot the fried some shallots to give addidtional fragrance to the dish.

2. I forgot the soak some dried mushroom and prepare it to serve with the dish. If not, it will be 香菇鸡丝河粉。 Hahahaha.
