Pork Lard Wanton Noodle (4 Pax)
I attempt to imitate the wanton noodles that I tried in Bangkok SabX2 noodles. I finally know the reason behind the unique taste! Anyway, I did 2 versions. The plain and the dark sauce version. The mentioned method is refering to the dark sauce version.

Ingredient 1. Dried noodles (Mee kia) - 1pkt 2. Raw Pork fat - 1 small tray from supermarket 3. Char Siew (BBQ Pork) - 300g (sliced) 4. Wanton or dumpling - enough for 4pax. 5. Choy Sim (菜心) - 3 stalks (cut into 2inch length)

Preparation 1. Heat up wok using medium flame and pour in the small tray of pork fats. Do not add any oil to it! Allow the fats to slow cook and fried by itself. Do remember to stir it occasionally.
2. Once the fats turn golden brown, scoop up all the crispy fats and place them onto a kitchen towel to cool down.

3. Separate the liquefied fats into a bowl and allow both to cool down. Recommend to cool the oil for approximately 2hrs till it turn murky before usage.
The Dish 1. Blanched the prepared veggies for 30secs and scoop them up for later usage.
2. Cooked the wanton or dumpling as well. Boil for about 2mins.
3. Add 1 tbsp of oyster sauce, 1 tbsp of kicap lemak manis (sweet soya bean sauce), 2 tbsp of liquefied pork fats and 2 tbsp of boil water from the wanton unto a serving plate. Mixed well and get ready for the noodles.
4. Allow the water to boil (bubbling hot) and add in 1.5 ball of the Noodles (Mee Kia). Remember to loosen the noodles before adding it into the water.
5. Boil the noodles for 30 secs, remove it into cool water, stir it loose, put it back into the boiling water for 10 secs and remove it and place it to the Pre-mixed sauce in the serving plate.
6. Mix the noodles well with the sauce. Garnish the noodles with the sliced Char Siew(BBQ Pork), cooked wanton or shrimp dumplings, veggies and fried pork lard and you are ready to serve.
After tasting it personally, I felt that this method is definitely unique and rather tasty. If the noodles are nicely cooked, it will definitely taste better than a lot of wanton noodles out there. The secret to the SabX2 wanton noodle is the taste of the liquified pork fats! Uniquely tasty!
