Prawn Soup Noodles (虾面汤) (5 to 6 pax)


Before I do up this dish, I have been accumulating prawn heads and shells for quite a while in the freezer. Think I have easily accumulated about 50 prawns. To make the soup tastier, I choose to add in a flower crab.


Ingredients 1. Prawn heads and shells - a bag full. 2. Fresh prawns - 12 PCs (de-shell) 3. Spareribs - 200g 4. Yellow noodles - 500g 5. Bee Hoon - 4 square pieces 6. Kang Kong - 1 small bundle 7. Bean sprout - 200g 8. Flowercrab - 1 whole piece (wash it clean. Scrub if needed) Prefer male crab as it is sweeter in taste. 9. Garlic - 7 cloves (2 cloves minced) 10. Ginger - 4 slice 11. White whole pepper - 2 tbsp 12. Fish cake - 2 whole PC 13. Slice lean pork - 250g 14. Rock sugar - 2 tbsp worth


The Soup Base 1. Heat up work, add 2 tbsp of cooking oil and add minced garlic. Saute till fragrant and add in the prawn heads and shells.


2. Stir fry it till it turns red and fragrant.


3. Transfer it into a pot and add 3 litres of water.


4. Add in the blanched spareribs, garlic cloves, sliced ginger, white whole pepper and flower crab and bring it to boil using high heat.


5. Once it boils, lower the heat, add in the rock sugar, 1.5 tbsp of salt and continue to simmer for an hour.


6. Add 2 tbsp of oyster sauce and taste your soup. Add more salt if desired.


7. Strained the soup using a strainer to remove all the heads and shells leaving the spareribs and garlics.


8. Add in the whole piece fish cake, lean meat and de-shell prawns. Allow it to boil for a minute and remove them for later usage.


9. Once done off the heat


Other Preparation 1. Boil the Bee Hoon till soften and set side.


2. Using boiling water to blanch yellow noodles for 15 secs, remove and set aside. (If you prefer soften noodles, you can blanch it longer)


3. Blanch the Kang Kong and beansprout in boiling water for 20 secs, remove and set it aside.


The dish 1. Place the desired amount of yellow noodles and Bee Hoon into a serving bowl.


2. Add some blanched veggies and add in the boiling hot soup. Drain all the soup back into the pot after adding into the serving bowl. Scoop the soup into the bowl again. You can choose to scoop some of the spareribs into your bowl too.


3. Garnish your noodles with few pieces of prawns, sliced fish cakes, lean meat, some fried shallots and some pepper.


4. Serve immediately.
