Fried dried Whitebait fish in Sweet Chilli Sauce

Ingredient 1. Dried Whitebait (银鱼) - 150g 2. Sweet chilli sauce - 4 to 5 tbsp 3. Sugar - 2 tbsp 4. Water - 1tbsp
Preparation 1. Rinse the whitebait will water and spread it on paper towel to dry it.
2. After drying for about 15mins, fry the whitebait till its lightly golden brown, remove it from oil and set aside.
The Dish 1. Using low heat to heat up your wok.
2. Add in the chilli sauce, water together with sugar and mix it well.
3. Pour in the fried white bait and quickly mix everything together. Once evenly mixed, off heat and scoop it onto a serving plate.
This dish goes well with fried Bee Hoon, Fried noodles, nasi lemak, plain rice or white porridge too.
Mistakes made 1. I fried it a little too long and the whitebait becomes too crispy. When mixing, the whitebait start to break into smaller pieces. Should scoop it up once it start to turn a little golden brown.
