Vegetarian cracker (斋鹅)

Ingredient 1. Bean skin - 3 pkt 2. Vegetarian Oyster sauce - 1 tbsp 3. Sugar - 2 to 3 tbsp 4. Sesame oil - 1 tsp 5. Five spice powder - 1/3 tsp 6. Pepper - a dash 7. 100ml of water. 8. Dark soya sauce - 1tsp
Preparation 1. Cut all the bean skin into the size of approximately 15cm by 7cm.
2. Mixed all the mentioned sauce n spices together. Only done, taste it (important step). Make sure it is not too salty and must taste a bit sweet. (If you deem not sweet enough, add more sugar or maybe honey to enhance it.)
The Dish 1. With the help of a brush, brush the mixed sauce onto the pieces of bean skin. Repeat this process on every piece of the bean skin by stacking it up.
2. I stack 8 pieces of bean skin together to form a piece but felt that it could be thicker. Remember to place the finished item in a staggered manner for easy removal at the later stage.
3. Steam the finished item for about 5 to 7mins and allow it to cool down before frying it.
4. Fry the steamed item using low heat. Remember to adjust the heat accordingly to prevent it from getting burnt. Fry till crisp, remove and place on a strainer to drip dry.
5. Allow it to air cool awhile before cut it into smaller pieces and kept into a container.
Mistakes made. 1. Forget to taste my sauce resulting the end product a bit salty and not sweet. (The above mention portion of sauces are adjusted from my original ones)
2. Not good in frying and did not control the heat well, resulting in external overcook and internally undercook. End up throwing away.
3. Air cool too long resulting some of it turned less crispy.
