Mango sticky rice (芒果糯米饭)(6pax)
Ingredients 1. Ripe mangoes - 3 fruits 2. Glutinous rice - 300g 3. Coconut milk (200ml) - 1 pack 4. Sugar - 1.5 tbsp 5. Salt - approx. 1.5 tsp
Preparation 1. Soak the glutinous for about 2hrs by adding water that is enough to submerge the rice grains by about 0.5cm.
2. Open up the pack of coconut milk and scoop out the top half of the pack and set it aside. (For the thickened sauce)
The Dish (cooking of sticky rice) 1. Drained the rice grains and add about 1.5 cups of water and 0.5 tsp of salt. Mix them well and steam it for 20mins.
2. 15mins into the steaming of sticky rice, take the remaining half packet of coconut milk, mix in the same amount of water (ratio 1:1), add in 1 tbsp of sugar and 0.5tsp of salt. Pour the mixture into a small pot and simmer it. Cook it over low heat, stir it constantly and make sure it does not boil. Once the sugar and salt dissolves, feel the mixture. It should be hot enough before coming to boil. Off the heat.
3. Once 20min is up. Take the rice out from the steamer and start to mix in the warmed coconut milk. (Note that there might be some leftovers)
4. Pour half of the warmed coconut milk into the rice and start to mix it. The milk should be absorbed rather fast. Scoop in somemore coconut milk and keep mixing it. Once you see that the rice show signs of saturation. Stop adding and leave the sticky for about 30mins to allow the flavours to blend in.
(Cooking the thickened sauce) 1. Take the set aside coconut milk, add 0.5tbsp of sugar, 0.5tsp of salt, 1tsp of corn flour and 4 tbsp of water. Mix them well and pour it into a small pot.
2. Heat up the mixture using low heat and stir it constantly until it thicken. Using low heat, the mixture ahould thicken before it comes to boil. Once you start to see lumps forming up, off heat and increase the speed of stirring. The mixture should be gluey in no time.
The Dish 1. Scoop the desired amount of sticky rice onto a plate. Skinned a mango and separate the mango from the seed. Place the mango onto the sticky rice and cut it into about 1 inch thick.
2. Pour a few spoonful of thickened sauce over the mango and sticky rice and you may serve your dish.
Mistake made 1. I should not have soak the rice overnight and end up the glutinous rice become a bit too soggy than desire.
I have adjusted the above mentioned steps after realising my mistakes.
