Air Fried Halved Chicken served with Noodles (Mee Kia) mixed in Shallot oil, Kicap Manis and Chilli

Ingredients (chicken) 1. Spring chicken - 1 bird 900g (cut into half) 2. Sea salt 3. Mixed herbs 4. Sesame oil 5. Dark soya sauce 6. Pepper 7. 5 spice powder

Ingredients (noodles) 1. Mee kia - 2 ball worth (1 ball for 1 pax) 2. Shallots - 3 cloves (Skin n slice) 3. Vegetarian oyster sauce - 1 tsp 4. Kicap Manis - 1 tbsp 5. Lingham extra hot chilli sauce - 3 tsp 6. Cooking oil - 5 tbsp

Preparation (chicken) 1. 4 hours before cooking, take a handful of Sea salt and rub all over the 2 halved chicken. Once done set it aside.

2. 2hrs after rub with sea salt, rinse it with water, dry it and add in the rest of the mentioned seasoning. Make sure both sides of the chicken are rub with the mentioned seasoning.

3. Once done, place the newly marinated chicken in the fridge without cover for 2 hrs before cooking it.

4. Pre-heat the air fryer for 5min at 180 degree Celsius.

5. Place the seasoned 2 halved chicken into the basket and Air Fried for 35mins at 180 degree Celsius. I turned my chicken every 10min so that the colour will be even and that the chicken will be cooked evenly as well. I start off with the skin facing upwards.

6. Once cooked, remove it from fryer n let it cool down naturally.

Preparation (noodles) 1. Heat wok using low heat and add in 5 tbsp of cooking oil and fry the sliced shallots. Once the shallots turn slightly brown, off heat and quickly remove from wok.

The Dish 1. Boil a pot of water, add some salt and oil and get ready blanched the green veggies of your choice and also the noodles.

2. Once water is boiling, blanch veggies for max 15sec and remove to prevent losing the crunchy sensation.

3. Loosen a ball of noodles into the boiling water and constantly stir it for 10 secs, remove it and place it into a chilled water n stir for 5 secs and place it back into boiling water for another 5 secs. Remove it into a mixing bowl.

4. Add approx. 2 tbsp of shallot oil to the noodles and mixed well.

5. Add the 3 tsp of chilli sauce (add more if you prefer it to be very spicy.), approx 1 tbsp of Kicap manis and 1 tsp of vegetarian oyster sauce. Mixed it well and the noodles are ready to serve with the chicken.

6. Serve the noodles with the halved grill chicken and some blanched veggies
