My version of Mee Goreng with whitebait. (银鱼马来炒面) (2pax)

Ingredient

1. Yellow noodles - 500g 2. Dried Whitebait; silverfish - a handful (fried till golden brown and set aside) 3. Yellow onion - 1 medium size (peel and dice) 4. Veggies - 5 small stalks of your preference (cut into bite size) 5. Egg - 1pc 6. Tomato - 1 medium size (cut into slices) 7. Unsalted stock - 200ml 8. Ketchup - 6tbsp 9. Chilli sauce - 3 tbsp 10. Dark soya sauce - 1 tsp 11. Fish sauce - 2 tsp 12. Lime - 3 medium size (to be squeezed into the final product) 13. Garlic - 2 cloves (minced) 14. Fish cake - 1pc (sliced)

The Dish 1. Heat wok using high heat and add 2tbsp of oil. Crack an egg and keep stirring it until it solidifies and add in the minced garlic and diced onion and continue to stir fry till fragrant and add in the sliced fishcake.


2. Add in the 200ml of stock, 6tbsp of Ketchup, 3 tbsp of chilli sauce, 1 tsp of dark soya sauce, 2 tsp of fish sauce, mixed it well and bring it to lightly boil and add in the prepared veggies inclusive of the tomatoes.


3. Once the green veggies changes its colour slightly, add in the noodles and continue to mix everything until all the liquid dries up, add in the fried Whitebait, mixed it well and the dish is ready to be served. (You may not see the fried Whitebait in the noodles, but during eating time, the Whitebait adds special sensation and taSte to the dish)


4. Before serving, you may garnish it with some fried shallot if available at home and squeeze in some lime to your preference.


As I was trying to clear whatever ingredients that is in my fridge, therefore didn't plan for this dish at the start. A lot of ingredients are missing as compared to the usual Mee Goreng. You may still add squid rings, prawns, some form of meat, beansprouts, etc.


*Please note. Do not add oyster sauce, salt, light soya sauce or anything the will add to the salty level of the dish. The cooked yellow noodles itself is already a bit salty.
