Shrimp dumpling with banana (香蕉虾饺)

Ingredient 1. Round wanton skin - 10pcs 2. Fish paste (鱼浆) - 200g 3. Porkee mince meat - 200g (Try to get this brand as their minced meat is in paste condition. Ideal to mix with fish paste) 4. Prawns - 10pcs (de-shell & de-vein) 5. Banana - 1pcs ( sliced into 10 round pcs)


Seasoning sauces 1. Oyster sauce - 2 tsp 2. Sesame oil - 1tsp 3. Pepper - 1/4 tsp 4. Light soya sauce - 1.5 tsp 5. cornflour - 2 tsp 6. Spice powder - 1/4 tsp


Preparation 1. Pour in the fish paste n minced meat into a mixing bowl.

2. Add in all the seasoning sauces less cornflour.

3. Mix them well and add on the cornflour n continue to mix them well. The content should get more gluey as compared to the initial.


The Dish 1. Put on disposable kitchen gloves.

2. Apply some cooking oil onto both hands before handling the paste. (To prevent the paste from sticking to gloves or hands)

3. Grab a handful of paste and roll it into the shape of a elongated ball.

4. Press in a piece of prawn together with a round slice of banana into the elongated ball of paste. (Make sure the tail is stick outside)

5. Once the prawn n banana is in, seal up the hole made by the prawn with the paste. Once done, place the paste onto a wanton skin. Continue to repeat this process till you finish all 10 sets.

6. Close up the wanton skin to the paste. You should not be able to wrap the entire surface of the paste. If it does, your ball of paste is too small. The sides and the bottom of the ball of paste will be covered with the skin. The top should be exposed. Repeat same process for all 10pcs.

7. Heat up wok and add enough oil for deep frying using medium high heat.

8. Add in all the dumpling for frying till golden brown ( I would suggest to do the frying in 2 batches for easier control. If you feel the the heat is too high, u can lower it after adding in the dumpling. But do remember to turn up the heat before you remove them from oil.

9. Lay kitchen towel at the base of your serving plate to soak up the excessive oil.

You can serve your dish with some thai sweet chilli or mayonnaise.
